Temperature is an important factor that determines the state of any material. Coconut oil gets frozen in winter because it has a low melting point of around 24º. It is also made of two types of fat-saturated and unsaturated. The oil remains liquid at higher temperatures and turns solid in winters. The higher content of saturated fats plays a major role in making coconut oil solid. However, the solid-state of coconut oil does not affect the integrity of the oil. Other oils like mustard, sunflower, and sesame remain liquid even in winters as they contain less amount of saturated fats.

There are two types of coconut oil: refined and unrefined. The major difference between them is how they are produced.

Unrefined Coconut Oil- Also called virgin coconut oil, unrefined coconut oil is extracted from the meat of the mature coconut. Many get confused with unrefined oil and cold-pressed. Remember, not all unrefined coconut oil is cold-pressed, but all cold-pressed is unrefined. 

Refined Coconut Oil– It undergoes certain processes like degumming, neutralizing, bleaching, and deodorizing to make it best for cooking. 

How to Store Coconut Oil?

Many think that coconut oil is shelf-stable, which is absolutely wrong! But, with proper storage, coconut oil can be stored for up to 2 years. Here are some of the tips and tricks to expand the shelf life of coconut oil. 

  • Keep it in an airtight container at room temperature.
  • Store coconut oil in a dark or dry place.
  • Refrigerate the oil to firm it up.
  • Do not store coconut oil in spots that have lots of moisture.
